12 Most Savory Pumpkin Recipes

When you hear the word “pumpkin” usually the visions of pumpkin pie, muffins and sweets come to mind. But, pumpkins are a very versatile fruit and can be easily incorporated into many savory dishes.

Pumpkin puree can be made quickly and easily at home with a food processor, blender or potato masher. Once made, pumpkin puree can be used in savory dishes in the place of potatoes, tomato sauce and squash.

1. Pumpkin chili

By using pumpkin puree in place of tomato paste in chili, you can create a dish that is not only beautiful in color, but is also enhanced with Vitamin A. For a vegetarian version of the dish, use tofu as your protein: Pumpkin Tofu Chili.

2. Pumpkin gnocchi

Don’t be intimidated by the word “gnocchi” as I was at first. Gnocchi are just little dumplings made out of flour, egg, cheese, potatoes and sometimes, pumpkin. Fresh gnocchi are as easy to make as fresh dough, whip up a batch of sage brown butter and you have a meal that is more fancy than it seems.

3. Pumpkin soup

Making a batch of pumpkin soup is a great way to use up your batch of pumpkin puree. Try an Asian twist on pumpkin soup by using pumpkin, sweet potatoes, cabbage, ginger, turmeric, curry and coconut milk.

4. Pumpkin pasta bake

Instead of using tomato paste in your pasta dish, use pumpkin puree. Adding a bit of cinnamon, nutmeg and sage to the pumpkin pasta will give you a lovely dish that is perfect for the fall season.

5. Pumpkin risotto

6. Pumpkin mac and cheese

The ultimate comfort food with added nutrients and a hint of autumn. The pumpkin in this dish will remind you of pumpkin pie, but with all the cheesy goodness of mac and cheese.

7. Pumpkin ravioli

The combination of sweet pumpkin puree and savory parmesan cheese in this pasta dish can be topped with a variety of different sauces, from sage brown butter to gorgonzola sauce to a cream sauce.

Cut up some pumpkin into cubes and stir fry with ginger, chilies and top with coconut for an Asian inspired side dish.

For a quick and easy side dish, roast pumpkin with shallots, sage and olive oil.
